Nicolette’s FAV Super Easy LEMON PARSLEY CHICKEN

NIC's lemon chicken

This DELISH CHICKEN recipe is SUPER fast + easy to make in a rush, or use as meal prep for the week + take as lunch / reheat for dinner.

INGREDIENTS -

  • 4 skinless, boneless chicken breasts cut in half
  • 1/2 cup fresh lemon juice
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • black pepper to taste
  • 3 teaspoons fresh parsley (I usually add more)

DIRECTIONS -

I place the chicken in a glass bowl I first coat them in the lemon juice then I add the seasonings and parsley.

I let the chicken soak this way for a little while  – I let the grill heat up.

Then I place each chicken piece on the grill and cook until the center reaches 165 degree (approx. 10-12 min a side).

Depends on how thick your chicken is – be sure it is cooked through and not pink on the inside.

Discard the remaining lemon juice and spices.

Lina and I serve roasted asparagus with this chicken.
